Combine 1¼ c. boiling water and 1 c. oatmeal. Let stand 20 minutes.
Cream together:
1 c. sugar
1 c. brown sugar
2 eggs slightly beaten
1½ c. flour
1 tsp. cinnamon
1 tsp. baking soda
½ tsp. salt
¼ tsp. nutmeg
1 tsp. vanilla
Once combined, add to oatmeal mixture.
Pour batter into cupcake pan and bake at 350º for 25 minutes. Let cool before frosting.
Cream Cheese Frosting:
2 8-oz. packages cream cheese, softened
½ c. butter, softened
2 c. sifted powdered sugar
1 tsp. vanilla extract
Combine cream cheese and butter. Add vanilla.
Gradually stir in sugar.
Frost cupcakes and store in refrigerator.
I just got Sperry boots and LOVE them - I think I need those mittens, they are too cute!
